The best way:
Keep some TL cash with you and a card. Both. Pay with TL in shops/street shops (unless card is accepted), use card everywhere else.

There are exchange offices, you can convert euro to TL from there.
If you type "Döviz Bürosu" (Exchange Officies) into the search engine, you can see what they look like and the nearest exchange office. There are currency exchange offices at the airports as soon as you get off the plane.
There are of course businesses that accept Euros, but you will waste time. And they may charge you extra money. Therefore, I suggest you convert to TL.
Or if you have a card with Visa/Mastercard, you can use it for payments. The use of cash in Turkey is quite low, most businesses use POS devices.
