新橋の馬並み家で 歌麿鍋(馬肉味噌すき焼き)
だいぶ前に一回行って、馬刺しとかは他のメニューは普通に旨いくらいだったけど、名物のこれだけ食べ損ねてたので再チャレンジ。
松竹梅で1番上の松を選んで、来たのはザブトン(一般的な特上バラ)、ロース、ヒレ
これらを味噌ベースのニンニクがめっちゃ効いた甘辛い割下にくぐらせて、トロロと出汁と卵黄のタレにつけて、、めっちゃご飯進むしこんなにスタミナつきそうな料理他にないよね!
ってくらいスタミナ味!

Utamaro nabe (sukiyaki with horse meat and miso) at Umanamiya in Shinbashi
I went there once a long time ago, and the rest of the menu, such as horse sashimi, was just as good as usual, but I missed out on this specialty, so I tried again.
I chose Matsu, the highest of the three on the Matsu-Take-Ume menu, and what I got was zabuton (a common extra tender belly), loin, and fillet.
These were dipped in a sweet and spicy miso-based sauce with a hint of garlic, and then dipped in a sauce of grated yam, soup stock and egg yolk!
It's so stamina-pumping!
It was so delicious!
