U mean like the one in Alita: Battle Angel, i prefer that to normal F1 races lol
Would seriously be interesting given the limited interaction you get with drivers in race, plus the increased potential for dangerous driving. Though might make drive to survive a little less interesting.
how would one gain a competitive advantage in such races if all competitors are of equal "smarts", and given that pressure and fatigue is non-existent ?

I think the predictability of software driving/racing would make it boring as most of the times the winners would be the same when you take out the humans from the equation 🤔
I guess that kind of thing will never happen, formula races are driven by people who want to win without calculating the engine power or the system limition.
That will be no ornamental if let AI control a racing car.
